Creamy Chicken Cacciatore

Creamy Chicken Cacciatore is a quick easy meal to cook, unless of course you make it in the slow cooker, then it’s an 8 hour meal to cook! I have made this recipe super simple so anyone can make it. This can be on the dinner table in 30 minutes.

There are two choices with the sauce for this recipe. You can use Hov’s Kitchens Mushroom and Red Wine Sauce (Which is what I used) or you can use Hov’s Kitchens Mediterranean Sauce.

The Mushroom and Red wine sauce already has red wine and mushrooms, so you don’t need to add red wine to the recipe, only a few more mushrooms. The Mediterranean Sauce has olives, capers and eggplant, so those flavours will blend through when you are cooking and won’t need to add as many olives. The choice is yours. Both go well in this recipe and both taste delicious.

I decided to make this into a creamy chicken cacciatore, you don’t have to! If you want a flavour that is more rich then omit the cream. My kids love this dish with or without the added cream. As long as it’s easy to make and the kids eat it, that is all I care about when I am busy and need to make dinner.

Let’s Make some Creamy Chicken Cacciatore…

You don’t need many ingredients for this dish. Just some chicken breasts (or thighs) Italian seasoning, the sauces, capsicums, mushrooms, stock, cream, basil and olives. Depending on which sauce you use of course! If you are using the Mediterranean Sauce add 1/2 cup of red wine to the recipe.

Season the chicken with salt and pepper and the Italian seasoning. Then heat oil in a skillet and when hot, add the chicken and cook 4 minutes each side. Take chicken off the heat and set aside.

To the hot skillet, add the garlic, bullhorn capsicum and mushrooms. Sauté until tender and then add Hov’s Kitchens Mushroom and red wine Sauce and the cream. Give it a good stir and then add the chicken broth. Then add the olives.

Add the Italian seasoning, salt and pepper and simmer until the sauce has thickened. Once the sauce has thickened, add the chicken back in and simmer until the chicken has cooked through.

Garnish with fresh basil and serve over egg pasta or with rice.

Ingredients

  • 1 tbsp Olive Oil
  • 4 boneless chicken breasts
  • 2 tbsp Italian Seasoning
  • salt/pepper
  • 1 red Bullhorn Capsicum
  • 150 g Mushrooms Sliced
  • 1 Jar Hov's Kitchens Red Wine and Mushroom Sauce
  • ¼ cup Thickened cream
  • ½ cup Chicken Broth
  • 1 Tbsp Italian Seasoning
  • ½ cup Chopped Fresh Basil
  • ¼ cup Black Kalamata Olives

Instructions
