Delicious Shepherd’s Pie

Beef, vegetables, gravy, potatoes and cheese – put it all together for a delicious Shepherd’s Pie. I love Shepherd’s Pie, I love it made with beef or lamb, both are just as good.

Making this dish in the afternoon for tonight’s dinner, I thought I could hold out but nope! I had to have some right away. Comfort food on a plate. Yum! This dish takes me back to my great grandmother’s house in Deloraine, Tasmania. I would spend sometimes half a year in Tassie and I would be fascinated by watching her cook everything from scratch in her large wood fired oven. I didn’t like when she chopped live chickens heads off though! I would refuse to eat the chicken dinner.

However, no chicken heads involved in this recipe, just good old beef mince, veggies and potatoes. Another dinner winner for the kids too! Shall we put this gem together? Yes indeed we should!

Let’s make some Shepherd’s Pie ..

Turn the oven on to 200C/400F and get your ingredients ready. Onions, garlic, zucchini & the carrot all need to be chopped finely.

In a large pot add the peeled and chopped potatoes – add a pinch of salt and cover the potatoes with cold water. Put on the stove and bring to the boil for around 15 minutes or until a fork slides easily through the potato.

In a large non stick fry pan, heat the olive oil and then add the onions, garlic, carrot and zucchini. Sauté for around 5 minutes until they soften. Once they have softened, add the Italian herbs, and then the beef. Cook for around 10 minutes.

Add vegetables and garlic to a non stick fry pan.

Add Hov’s Kitchens Napoli Sauce, Worcestershire sauce and a bit of salt and pepper. Then add the flour and give it a good stir through the mixture. Cook for a further few minutes. Then add the beef stock and simmer for 10 minutes or until you have a nice thick gravy.

Meanwhile, drain the potatoes and add back to the pot. Add salt and pepper and the cream. Mash the potatoes until nice and creamy. Add the shredded cheese through the potato and stir with a spoon until well combined.

In a baking dish add the Shepherd’s Pie mixture and smooth it out until it’s level. Then add the mashed potato on top and again, smooth it out until it’s level. Add some chopped rosemary on top and then bake for around 25 minutes.

Ready to go in the oven.
Ready to serve.

Ingredients

  • 2 tbsp Olive Oil
  • 1 large Onion Chopped finely

  • 3 tbsp Plain Flour
  • 1 Tbsp Worcestershire sauce
  • 1 Cup Beef stock

  • salt and pepper
  • 1 cup shredded cheese
  • 10 Large Potatoes Peeled and cut
  • 1/2 cup Cream
  • 1 tbsp Fresh Rosemary Chopped finely
