Skillet Sausage Casserole

Day????? of Isolation! Or is it?

Anyone else in Victoria? We are still meant to be in isolation. However, I had to go and buy bunny food and cat food, the roads were packed, the shopping centre was packed and Coles was packed. I saw people walking around everywhere. Not like the last few weeks, today I saw not one person wearing a mask or gloves. It was like there was some sort of normality back.

Have Victorian’s seen how other states have relaxed their restrictions and just said “Bugger this, we are going to follow suit, no matter what Dan say’s”?

For those of us who have the kids at home, want something easy and quick for dinner but also filling and healthy? If you have a packet of snags in the freezer and don’t know what to do with them besides BBQ’s or hotdogs – I have the perfect recipe.

I used to cook for kids 5 days a week, for 6 years – so I was always coming up with ways for the kids to enjoy their food and eat their vegetables. This recipe worked well. Okay, so sausages aren’t the healthiest of food, but it’s packed with other goodies that are healthy and kids usually love sausages.

This doesn’t have to be made with BBQ sausages, you can use any sausage you like. For this dish I used Hov’s Kitchen’s Mediterranean sauce.

Skillet Sausage Casserole

Turn those bbq snags into something different. One skillet is all you need to make this easy dinner.

  • 1 tbsp Olive oil
  • 1 Cup Brown Rice Or packet rice (Cooked)
  • 1/2 Cup Shredded Cabbage
  • 1 12 pack bbq sausages Cut into bite size pieces
  • 1/2 Bunch Basil Chopped
  • 1/2 Cup Hovs Mediterranean Pasta Sauce
  • 1 Cup Chicken Stock
  • 1 medium Zucchini Diced
  • 3 Stems Spring Onion Diced
  • 3 Cloves Garlic Minced
  • 1/2 Brown Onion Diced
  • 3 Small Roma Tomatoes Diced
  • 1 Red Bullhorn (or Capsicum) Diced
  • 1 tsp Salt and Pepper


  • Heat the oil in your skillet and when hot add the bite sized sausages. Cook until browned and set aside on a paper towel on a plate. 6-8 minutes
  • Add Bullhorn (Capsicum), brown onion, garlic and cook until softened.
  • Add the rest of the vegetables and cook until softened.
  • Add the cooked brown rice and stir for around 3 minutes.
  • Add Hov’s Mediterranean Pasta sauce, chicken stock and the chopped roma tomatoes. Simmer for about 5 minutes.
  • Add the sausages back to the casserole, give it a good stir. Simmer for around 5-7 minutes.
  • Sprinkle the dish with the chopped spring onions
  • Serve


You can add any rice you like, just make sure it is cooked properly before you put it into the dish otherwise you will end up with hard rice in your dinner!
