Meatless Monday again on a Tuesday! Better late than never right? I cooked the Ultimate Vegan Burger for dinner last night (Monday) but I didn’t have time to upload and do a blog about it. So today it is! Happy Meatless Tuesday. It just doesn’t have the same ring to it does it?

This Ultimate Vegan Burger is super simple and easy to make, it also binds together and doesn’t fall apart. Which is always a bonus. The flavours balance beautifully and it’s just really a great vegan burger.

I bought some Vegan Mayonnaise, I could have made it from scratch but this recipe would become more technical and challenging. I wanted it to be an easy recipe for everyone to enjoy and have no trouble making. Praise Vegan Mayo is easy to find on the shelf at either Woolies or Coles and it’s Australian Made.

Let’s Make some Ultimate Vegan Burgers..

First rinse your chickpeas and corn kernels to get the brine off them. Then put them along with half a bunch of coriander into the food processor. Add the coriander stalks too. Give it a whizz until combined.

Then add the spices and flour to the food processor along with a bit of salt and pepper. Pulse again until combined.

Take mixture out of the processor and on a lightly floured surface – make the mixture into 6 large patties. Set Aside.

Vegan Chipotle Mayonnaise ..

In a large bowl combine the Vegan Mayonnaise and Hov’s Kitchens BBQ Chipotle Sauce. Set Aside.

Rest of the Burger ..

With a fork mash the avocado’s – add a bit of salt and lemon juice. Set Aside.

Heat a bit of Olive Oil in a large non stick fry pan and cook the patties for 3-4 minutes each side. Then put aside.

Add a splash more oil and cook the onion, on a low heat for around 7-8 minutes. Then put the cooked onion into a separate little bowl and set aside. Cut the hamburger buns and on the same fry pan you previously used, lay the burger buns face down until the buns have crisped a little.

Build The Ultimate Vegan Burger ..

On the bottom burger bun, spread a good layer of the mashed avocado. Top with lettuce, the Vegan patty, onions, tomato, more lettuce. On the top bun, spread a good layer of the Chipotle Mayonnaise. Then put the lid onto the rest of the burger.

If you want to make this into the Ultimate Vegan Cheeseburger – just add Vegan Sliced cheese.

The Ultimate Vegan Burger

Ingredients

  • 2 cans chickpeas washed

  • 1/2 Bunch Coriander
  • 1 tsp Paprika
  • 1 tsp Ground Coriander
  • 1 tsp Garam Masala
  • 6 tbs Plain Flour
  • 1/2 cup Vegan Mayonnaise
  • 1/4 Cup Hov's Kitchens BBQ Chipotle Sauce
  • 2 Avocados
  • 1/2 tsp lemon juice
  • 2 Red onions Sliced
  • 2 Tomatoes sliced
  • Lettuce
  • 6 Burger Buns

Instructions

Ultimate Vegan Burger Patties

  • In a large bowl combine the Vegan Mayonnaise and Hov's Kitchens BBQ Chipotle Sauce. Set Aside.

Notes

You could also add some Vegan Sliced Cheese to the burger if you want an Ultimate Vegan Cheeseburger.
