Vegan Chocolate Chilli

That time of the week again. It’s Meatless Monday! I made a favourite today, Vegan Chocolate Chilli. Perfect for those cold winter nights. Adding the dark chocolate gives this dish a depth of flavour and richness but it doesn’t make the chilli taste like chocolate.

This dish is super easy to make and will be ready in 30 minutes. Perfect on those days when you don’t want to spend ages in the kitchen cooking. You can also freeze any leftovers and keep it for another meal. The Vegan hubs divided all the leftovers and put them in containers for him to take to work for lunch!

Vegan Chocolate Chilli is a good healthy meat substitute and the bonus is that is tastes so good as well! I used to make a similar version when I was a childcare chef and the kids loved it. I would serve it with rice, sour cream and corn chips.

Let’s Make some Vegan Chocolate Chilli…

There are quite a few ingredients in this dish but most are pantry staples, besides cooking the actual chilli, grabbing the ingredients takes the longest haha.

Ingredients.

Ok, bear with me .. The ingredients as I said is quite lengthy. You will need

  •  Olive Oil
  • Onion Chopped
  • Garlic Cloves Minced
  • Red Poblano Chilli Chopped
  • Green Poblano Chilli
  • Sliced Mushrooms
  • Chilli powder
  • Cinnamon powder
  •  Cumin
  •  Paprika
  • Chopped tomatoes
  • Lime Juice
  •  Hov’s Kitchens Arrabbiata Pasta Sauce
  •  Hov’s Kitchens BBQ Chipotle Sauce
  • Vegan Beef stock (Massels)
  • Red Kidney Beans
  • Black beans
  • Cannellini Beans
  • Corn Kernels
  • Green lentils
  •  70% Cocoa Chocolate Grated
  • Avocado
  • Green Jalapenos
  • Bunch chopped Coriander

Once you have all the ingredients, it easy from there.
In a large pot add the oil and once the oil is hot, add the onions, garlic, Poblano Chillies and mushrooms. Sauté until softened. Then add the spices and chopped tomatoes and cook for around 3 – 4 minutes. Add the lime juice.

Add the lentils and Vegan Beef stock and give it a good stir. Then add Hov’s Kitchens Arrabbiata and Chipotle sauces. Bring to the boil and cook for a couple of minutes. Turn it down to a simmer and then add all the beans, corn and the grated chocolate. Simmer stirring regularly for around 15 – 20 minutes until the lentils have cooked through and the chilli is quite thick. Add salt and pepper to your liking.

Serve with chopped coriander, chopped Jalapenos and sliced Avocado. You can also serve with rice, sour cream and corn chips too!

This vegan chilli is nothing short of amazing, packed with vegetables, beans, chocolate, lentils and tomatoes. You can't go wrong with this delicious Vegan dish.

Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion Chopped
  • 4 Garlic Cloves Minced

  • Cup Sliced Mushrooms
  • 1 tsp Chilli powder

  • ¼ Cup Lime Juice
  • 1 Jar Hov's Kitchens Arrabbiata Pasta Sauce
  • 1/4 Cup Hov's Kitchens BBQ Chipotle Sauce
  • 250 ml Vegan Beef stock (Massels)
  • 1 can Red Kidney Beans
  • 1 can Black beans
  • 1 can Cannellini Beans
  • 1 can Corn Kernels
  • ½ Cup Green lentils
  • 100 g 70% Cocoa Chocolate Grated
  • 1 Avocado
  • 2 Green Jalapenos
  • 1 Bunch chopped Coriander

Instructions
